Classic Vegetarian Dinner Recipes

If you're a new vegetarian or just want to get back to basics, you should learn how to cook several classic vegetarian dinner recipes. These recipes are classics for a reason, they taste great, they're easy to make, and they're full of the nutrition you need to be a healthy vegetarian.

One great dish when you're looking for classic vegetarian dinner recipes is a delicious lentil soup. Take some dry, uncooked lentils, and rinse and clean thoroughly so there is no dirt on them. Then, place the clean lentils in a stockpot or Dutch oven along with some water or vegetable broth. Bring to a boil, lower the heat, partially cover the pot, and cook, for about half an hour. Then, add some salt and cook until the lentils are tender. While you're waiting for the lentils to cook, in a second pan, heat some olive oil and sauté some chopped onions. Then, add some minced garlic cloves and soy sauce, and sauté a bit longer. After the lentils are cooked, stir in the onions, along with some cumin and paprika, and cook a little bit longer to allow the flavors to combine. Lentil soup can be pureed with an immersion blender or served as whole lentils in the broth.

Another option when you are searching for classic vegetarian dinner recipes is to make a simple Portobello mushroom sandwich. Remove the stem from the mushroom, and cut the mushroom in half. Brush the mushroom with some olive oil and sprinkle generously with salt and pepper. Grill the mushrooms for a few minutes on each side, or until brown. Place the pieces of mushroom between two pieces of bread that you have brushed with some olive oil and minced garlic and toasted, and top with your choice of wonderful fillings, including lettuce, tomatoes, onions, and pickles. Also, if you want, you can also melt some cheese over the mushroom while it's still on the grill before transferring it to bread.

A third option for classic vegetarian dinner recipes is to make some wonderful stuffed shells. While this isn't the healthiest recipe, it's great as a special treat. Boil large pasta shells in water until done. While you're waiting for the shells to cook, mix together parmesan cheese, mozzarella cheese, and ricotta cheese, along with some parsley and nutmeg. Take a baking dish and spoon some tomato sauce into the pan and spread with a spoon or spatula so it covers the bottom of the dish. Then, carefully fill the cooked shells with the cheese mixture and place in one layer in the pan. Pour the remaining sauce over the stuffed shells, cover with foil, and bake until the cheese is oozing out of the shells and the sauce is bubbling. Serve this dish with a side salad so you at least have something that is healthy on your plate. Also, if you start your meal with a fresh garden salad, you'll eat less of the main dish, which means you'll have enough to serve as leftovers the next day, without having to cook a whole new meal.

Meat eaters would certainly like to try out this tasty recipe called Vegetarian Chili. In this recipe there is no meat products used and that's why it is called vegetarian chili.

Vegetarian Chili

Heat 1 tablespoon of vegetable or olive oil preferably in a pan to which you can add 2 to 3 coarsely chopped medium onions and 2 teaspoons of garlic which has been finely chopped and stir fry well till they are cooked. Add 2 cups of frozen whole sweet corn and sauté well. Also add a bagful of a mixture of broccoli, carrots and cauliflower, a can of red kidney beans that have been washed and drained, a can of chick peas, and 2 whole cans of tomatoes which have been diced along with green chilies. To this add a can of tomato sauce and 2 teaspoons of chili powder,3 spoons cumin powder, salt to taste and also a dash of ground red pepper. Leave the mixture to boil for at least 20 minutes over medium flame making sure that you stir the ingredients once in a while. Cook till you find the vegetables to be crispy and yet tender and the chili hot.

Vegetables Needed

Olive oil cooking spray 2 medium bell peppers, which have been cut into 1-inch pieces 1 medium onion, slit into 8 wedges, and separated into pieces 2 medium sliced zucchini, 1 package fresh whole mushrooms, which have been sliced 1/2 teaspoon salt to taste 1/4 teaspoon pepper

Tomato Sauce 1 large onion, finely chopped 2 tablespoons chopped garlic 1 can (28 oz) Progresso® tomato puree 3 tablespoons freshly chopped or 1 tablespoon dried basil leaves 3 tablespoons chopped fresh or 1 tablespoon dried oregano leaves 1 teaspoon sugar 1/2 teaspoon salt 1/2 teaspoon crushed red pepper flakes

Lasagna 12 uncooked lasagna noodles 4 cups shredded mozzarella cheese 1 cup shredded Parmesan cheese

Start by having your oven pre heated to 450 degrees F. Use the cooking spray to oil a 15x10x1 inch pan and inside the pan place the bell peppers, mushrooms, zucchini evenly in a single layer. Also spray on the lined vegetables and sprinkle using salt and pepper. Have this baked for 20-25 minutes making sure to have the vegetables turned at least once and cook till tender.

Take a 2 quart saucepan and have it sprayed with oil, add the onions and garlic and cook over medium flame for at least 2 minutes making sure to stir occasionally. Add in all the remaining ingredients for making sauce and leave to boil and then reduced the flame. Allow to simmer for at least 15 to 20 minutes till it thickens considerably.

Take the packet of noodles and have them cooked according to the instructions on it. Drain the excess water and keep aside. In a separate bowl mix the cheeses well and keep aside.

Reduce the temperature of the oven to 400 degrees F. In a glass baking dish spray some oil and a quarter of the sauce spread at the bottom. Over this spread the 3 different noodles. Again pour the remaining sauce and spread evenly till the noodles are fully covered. Over this ad the cooked vegetables and over this mixture spread the cheese mixture. Have this baked without any cover for at least 25 minutes or till done. Allow to cool before you serve.

A Vegetarian Lasagna Recipe To Satisfy Your Hunger

Step 5

This part of the vegetarian lasagna recipe might test you. Get a casserole pan and spread some sauce into it. Add a layer of the noodles you just cooked and then add eggplant, more sauce, cottage cheese, spinach mix, and another layer of noodles. Do this process again and again until you fill the dish or until you are satisfied with how thick your lasagna is.

Step 6

Now for the best part because it's the easiest. To finalize your pasta, add mozzarella cheese, tomato sauce and some tomato slices. Then add parsley flakes for more flavor and color.

After you have prepared all of this, bake the dish at a temperature of 350 degrees and leave it on for about an hour. Vegetarian Recipes; 8 Essential Ingredients and Their Benefits

1. Whole Grains
Using whole grains is by far the best way to create long lasting energy and ward off disease. For moral, ethical and health reasons, the vegetarian and vegan lifestyles are gaining in acceptance and popularity worldwide, and simple vegetarian recipes are being concocted and published at an ever increasing rate.The problem is, most of these recipes are just a rehash of 'regular' recipes, hold the meat. Why not look at dishes that were originally intended to be meatless, whose flavor and presentations are complete as is.

Hot and Sour Soup
This popular offering of Chinese restaurants in the US is often served with chicken stock, egg, and pork, meatless and vegan hot and sour soup is just as valid and traditional. Among simple vegetarian recipes, hot and sour soup is a fancy and versatile offering. By using the recipe as a guideline, you can alter the ingredients to cater to the taste of your audience or the contents of your refrigerator. It also has a very short cooking time.
-> Base:
This soup can be made with a water base or you can use a vegetable broth. About 6 cups.
-> Vegetables:
Mix and match the vegetable combination. Amount of each ingredient depends on what you have on hand and how veggie rich you like your hot and sour soup. - Mushrooms (Any Kind) slice thin.
- Bamboo Shoots
- Carrots (cut into thin strips)
- Lilly buds (must be reconstituted)
- Bean sprouts (non traditional according to restaurants but adds protien and flavor)
- Tofu cut into cubes or thin rectangular strips. Since this recipe has a short cook time, you don't have to go with the extra firm tofu if you don't have it.
-> Spices and flavoring:
- Red Pepper Flakes (the hot part). Add to taste.
- Hot chili oil (more heat). Optional.
- White pepper (ground or powdered).
- Soy Sauce (About 2 tsp).
- Sesame oil or other flavorful vegetable oil (about 1 tsp)
- Vinegar (the sour part). Rice vinegar is traditional but you can substitute balsamic, wine, etc as desired. (About 2 tablespoons)
- Sugar (about 1 tsp)
- Ginger (optional). (About 3 tsp)
-> Additional ingredients:
- Corn starch mixture (1 tsp corn starch in ¼ cup water) used as an optional thickener.
- Chopped green onions as a garnish.
- Other veggies you may have lying around, like broccoli or water chestnuts.
-> Cooking:
- Heat the base to boiling.
- Add the ingredients while still on the heat.Add the harder veggies (carrots, bamboo shoots) first to give them more cooking time. Add the tofu and mushrooms near the end.
- Add the optional corn starch mixture at the end, stirring as you go.
- Salt and pepper to taste.
- Remove from heat and let stand for a few minutes.
Serve hot. Garnish with the chili oil and onions.

Stir Fry:
Among simple vegetarian recipes, this is about as simple as you can get.
All you need is a good frying pan or wok, some flavorful oil, and a bunch of vegetables.
The point of stir fry is to cook the veggies quickly over high heat, to preserve the flavor and nutrition. A wok is best suited for this but not required. If you do want to use a wok, consider the electric version. Most ranges are not suited to wok cooking.
-> Veggies:
Whatever you want, whatever you have, as long as it can be fried and cut into small pieces.
- Mushrooms (any kind)
- Carrots
- Celery
- Onions
- Bean Sprouts
- Snow Peas
- Green Beans (fresh)
- Broccoli
- Bamboo Shoots
- Water Chestnuts
- Cabbage
- Spinach
- Tofu (firm, in cubes)
Get the oil pretty hot before you start cooking.
Once the oil is ready, begin adding the vegetables, staring with the hardest first and moving on to the softer ones. Cooking times are not exact. You will need to develop an eye for when to add each layer of ingredients.
An optional step at the end is to add some soy sauce or other flavored liquid just before serving.
Serve with rice and herbs.

Lentil Soup
Simple vegetarian recipes are not limited to the Asian side of the world. Lentil soup is a common European peasant food, created when eating meat happened rarely, if ever. This simple vegetarian recipe can also help clean out the fridge. And, like the hot and sour soup (above), it cooks in under an hour.
Lentils are a great protein source and, unlike other beans, don't have to be soaked before cooking.
-> Base:
Water or vegetable stock. (About 8 cups)
-> Veggies:
- 4 cups lentils, rinsed but not soaked.
- 2 carrots, diced.
- 2 stalks celery, also diced.
- 1 chopped onion.
- Minced garlic, about 2 cloves or to taste.
- Tomato: This can be chopped fresh, canned crushed or even a can of tomato paste.
- Spinach, sliced thin. (About ½ cup)
- Any other veggies that you feel like adding. Mushrooms, cabbage and
-> Spices:
Mix and match as desired.
- Oregano
- Dried basil
- Bay Leaf
- Vinegar (optional and to taste). (About 2 tbs)
-> Cooking:
- Heat about ¼ cup of oil (olive, sesame, corn, etc.)
- Add onions and the hard vegetables. Stir until onions are translucent and soft.
- While still on the heat, stir in the spices and the softer vegetables (mushrooms). Cook for 2-3 minutes to allow flavors to blend.
Do not add the spinach until ready to serve.
- If desired, remove the bay leaf at this time.
- Add the base, lentils, and tomato.
- Set heat to medium high until the base begins to boil.
- Reduce to a simmer and cook for 30-40 minutes, until the lentils are chewy but not mushy.
- Add spinach just before serving.
So as you can see, with the above simple vegetarian recipes on hand in your kitchen you can and will have some flavorsome vegetarian dishes to serve to your friends and family on a regular basis.

Vegetables Stir-Fried

Ingredients
* 4 oz. fresh green beans * 2 carrots * 1 sweet red or yellow bell pepper, seeded * 1/2 small cauliflower, in small florets * 1 large broccoli stalk in small florets * 2 Tbsp. canola oil * 1 red onion, thinly sliced * 3 garlic cloves, peeled and chopped * 1 small Japanese eggplant, thinly sliced * 2 Tbsp. grated fresh ginger * 4 oz. sugar peas, topped and tailed * 1/2 Tbsp. soy sauce * 1/2 Tbsp. Mirin (see Note) * 1/4 tsp. sugar freshly ground pepper
Slice beans and carrots on the diagonal. Cut pepper into 1-inch squares. In a large pot of boiling water, separately blanch beans, carrots, cauliflower and broccoli, just until tender-crisp. Using a slotted spoon, transfer vegetables from water to a colander and immediately rinse under cold running water to prevent further cooking. Drain thoroughly. Heat about 2 tsp. oil in heavy skillet or wok over medium heat. Add onion and 1 clove garlic, and stir-fry 3 to 4 minutes. Add eggplant, some ginger, more garlic and stir-fry briefly. Add peas and stir-fry 3 minutes longer, adding more oil if necessary.
Add as many of the blanched vegetables, along with some of the garlic and ginger, as you can stir-fry at one time. If pan is full, transfer vegetables to baking dish and keep warm in an oven preheated to 250 degrees.Combine all vegetables in large serving bowl. In small bowl, mix together soy sauce, Mirin and sugar. Mix soy mixture into vegetables. Season to taste with pepper and serve.
Mirin, found in the Asian or specialty foods sections of many supermarkets, is a sweetened, mild Japanese rice cooking wine with a negligible amount of alcohol that evaporates in cooking. Much of the Indian population is vegetarian, and they enjoy the most extensive vegetable dishes in the world.
This is not only because of the predominant Hindu religion with its respect for all living creatures.
Also feeding 1 billion Indian people nowadays can be done much more efficiently by growing vegetables in stead of animals.
Last but not least: when a refrigerator is not available, it is much easier to use up small portions of vegetables, in stead of having to slaughter and store 1 big animal.
For vegetarian dishes, you will notice that each Indian region has distinct cooking techniques and flavoring principles to prepare them.
You have probably also noticed that there are many, many "curry"-recipes. Actually "Kari" is the Tamil (one of the many languages spoken in India) translation for the English word "sauce". And "curry" is the western way of pronouncing this word.
Before coming to Malaysia, my simple western recipe for using chick peas was to add them in thick soups... Since Malaysia is the melting pot of all Asian cuisines, I notice that there are as much chick pea curry recipes as that there are people here.
Here is one of them: a home-cooked chick pea curry recipe from my Indian friend Ssussi. She uses a lot of fresh ingredients and her recipe takes a bit more of your time than expected for such a simple yet delicious dish.

INGREDIENTS
* 1 can of chick peas (15 1/2 Oz; 439 gr) * 1 medium onion, finely chopped * 1 teaspoon ginger, finely chopped * 1 clove garlic, finely chopped * 1 green chilly, finely chopped * 2 medium well ripened tomatoes, seeded and chopped * 1 tablespoon fresh coriander chopped * 1 tablespoon lemon juice * 10 g vegetable oil * Spices: - 1/2 teaspoon turmeric - 1/2 tablespoon ground coriander - 1 tea spoon "garam masala" - salt to taste

PREPARATION
1. Drain chick peas, reserving the liquid.
2. Cook the onions, ginger garlic, chilies and turmeric in the vegetable oil until golden and softened.
3. Add the tomatoes and cook to soften, then add the ground coriander and chick peas.
4. Cook for 10 minutes, add the reserved liquid and cook a further 10 minutes.
5. Add "garam masala", lemon juice and stir in the fresh coriander. Cook gently for 2-3 minutes, adding more liquid, if needed, to make a sauce.
Serve with "naan bread", "chapati" or as a side dish.
